- 1 cup sourdough starter
- 1 ½ cups all-purpose flour
- ½ cup freshly grated Parmesan cheese
- 1 tablespoon freshly cracked black pepper
- 2 tablespoons olive oil
- 1 teaspoon salt
Instructions
- In a large bowl, mix your sourdough starter with warm water. Gradually add the all-purpose flour and salt until a shaggy dough forms. Knead for about 10 minutes, or until smooth and elastic.
- Cover the bowl with a damp cloth and let it rise in a warm place for 2-4 hours, or until it has doubled in size.
- After the dough has risen, divide it into smaller portions and roll them into flat rounds. Brush the surface with olive oil and sprinkle generously with freshly grated Parmesan cheese and black pepper.
- Heat a skillet over medium heat. Cook each flatbread for about 3-4 minutes on each side, or until golden brown and bubbly.
- Enjoy the flatbreads warm with additional Parmesan, olive oil, or a side of garlic mushrooms.
Notes
Use a cast iron skillet for the best results. Allow the dough to rise adequately for a tender texture.
