  • 1 cup fresh blackberries
  • 1 cup dark chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)
  • Butter for greasing the pans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then pour in the buttermilk, vanilla extract, and almond extract.
  5. Gradually add the dry ingredients to the wet mixture, folding gently.
  6. Fold in the fresh blackberries carefully.
  7. Divide the cake batter evenly into both prepared pans and bake for 30 to 35 minutes.
  8. Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  9. For ganache, heat heavy cream until it simmers, then pour over chopped dark chocolate, stirring until smooth.
  10. Assemble the cake by spreading ganache on one layer, topping with blackberries, then place the second layer on top and pour ganache over the entire cake.
  11. Garnish with more blackberries and a dusting of powdered sugar.

Notes

For a vegan option, substitute eggs with mashed banana or applesauce and use plant-based milk. Ensure that all ingredients are at room temperature for better mixing.
