- 2 blood oranges, zested and juiced
- 1/2 cup olive oil (or canola oil)
- 1 cup granulated sugar (or coconut sugar)
- 3 large eggs
- 1 1/2 cups all-purpose flour (or gluten-free blend)

- 1/2 tsp baking soda
- 1 tsp ground cardamom
- 1/4 tsp salt
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
- In a bowl, combine olive oil, sugar, and eggs; whisk until smooth and slightly pale.
- Add the zested peel and juice from the blood oranges to the wet mixture.
- In another bowl, sift together flour, baking powder, baking soda, cardamom, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick comes out clean.
- Allow the cake to cool for 10 minutes before transferring it to a wire rack. Dust with powdered sugar before serving.
Notes
For a vegan version, substitute eggs with flaxseed meal or aquafaba. Experiment with spices like cinnamon for added flavor.
