- 8 oz cream cheese
- 1 cup granulated sugar
- 2 large eggs
- 1 cup sour cream
- 2 cups blueberries (fresh or frozen)
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup oats
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter; press firmly into a 9-inch springform pan and bake for 10 minutes. Let cool.
- In a large bowl, beat cream cheese, granulated sugar, and sour cream until smooth. Add eggs one by one, mixing well. Fold in blueberries gently. Pour over the cooled crust.
- In another bowl, mix oats, sugar, and cinnamon. Cut in butter to form crumbs and sprinkle over the cheesecake filling.
- Bake for 50-60 minutes until the center is set but slightly wobbly. Turn off the oven, crack the door, and let cool inside for 1 hour.
- Refrigerate for at least 4 hours, preferably overnight. Slice and serve chilled.
Notes
Ensure cream cheese is at room temperature for a smoother texture. Don’t rush the chilling time for best results.
