Description

A delightful Blueberry Yogurt Mousse Cake that combines the tangy flavor of fresh blueberries with creamy yogurt, resulting in a light and fluffy dessert that’s perfect for any occasion.


Ingredients

  • 2 cups fresh blueberries
  • 1 cup plain yogurt (Greek preferred)
  • 1 ½ cups cake flour
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp baking powder
  • Zest and juice of 1 lemon
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan or line it with parchment paper.
  2. If using fresh blueberries, rinse and pat them dry. If using frozen, let them thaw and drain.
  3. In a large mixing bowl, beat the butter and sugar until light and fluffy, about 3-5 minutes.
  4. Add eggs one at a time, followed by the yogurt. Mix until well combined.
  5. In another bowl, whisk together the cake flour and baking powder. Gradually add to the wet mixture, mixing until just combined.
  6. Gently fold in the fresh blueberries, reserving a handful for decoration.
  7. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool for 10 minutes before transferring to a wire rack.
  8. For the mousse, whisk the yogurt until smooth, fold in the remaining blueberries and lemon zest. Sweeten to taste with honey or sugar if desired.
  9. Once the cake is completely cool, slice it in half horizontally (if desired), spread a layer of blueberry mousse, then top with more mousse. Decorate with reserved blueberries and lemon zest.
  10. Chill in the refrigerator for an hour before serving.

Notes

For variations, you can substitute yogurt with a dairy-free alternative or use frozen blueberries if fresh ones are unavailable.
