Description

A comforting Italian classic featuring rich Bolognese sauce paired with wide ribbons of pappardelle pasta.


Ingredients

  • 1 tablespoon olive oil
  • 1 finely chopped onion
  • 1 chopped carrot
  • 1 stalk of chopped celery
  • 2 cloves of minced garlic
  • 1 pound ground beef
  • 1 pound ground pork
  • 2 tablespoons tomato paste
  • 1 cup dry red wine
  • 2 cans crushed tomatoes (28 ounces total)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup milk or cream (optional)
  • Pappardelle pasta
  • Fresh parsley or grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery, cooking until soft, about 5-7 minutes. Stir in garlic and cook for another minute.
  2. Increase heat to medium-high and add ground beef and pork. Season with salt and pepper, cooking until browned.
  3. Stir in tomato paste and caramelize slightly. Add red wine, scraping the bottom to deglaze, and simmer until reduced by half.
  4. Mix in crushed tomatoes and oregano, then bring to a simmer and reduce heat to low.
  5. Let the sauce simmer uncovered for at least an hour, stirring occasionally. Add milk or cream in the last 10 minutes if desired.
  6. Bring salted water to a boil; cook pappardelle according to package instructions until al dente. Drain and reserve a bit of pasta water.
  7. Toss the pasta with the sauce, adding reserved water as needed for consistency. Serve with parsley or Parmesan.
