- 4 salmon fillets, skin-on
- 2 ripe peaches, sliced
- 1/2 cup bourbon
- 1/4 cup brown sugar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- Salt and pepper to taste
Instructions
- In a bowl, whisk together bourbon, brown sugar, olive oil, minced garlic, chopped thyme, salt, and pepper. Add sliced peaches to the marinade and let them soak for about 30 minutes.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let them marinate for about 15-30 minutes.
- Preheat your grill on medium-high heat or the oven to 400°F (200°C).
- For grilling, place the marinated salmon on the grill, skin side down, along with the peaches. Grill for 6-8 minutes per side, or until the fish flakes easily with a fork. For baking, lay the salmon and peaches on a lined baking sheet and roast for 12-15 minutes or until cooked through.
- If peaches are intact, grill or roast them until caramelized, approximately 2-3 minutes on each side.
- Plate the salmon and spoon over the remaining marinade, complemented with the caramelized peaches.
Notes
For a non-alcoholic option, consider using a blend of apple juice and vanilla extract. This dish pairs well with sautéed greens or a quinoa salad.
