Ingredients

  • 4 salmon fillets, skin-on
  • 2 ripe peaches, sliced
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together bourbon, brown sugar, olive oil, minced garlic, chopped thyme, salt, and pepper. Add sliced peaches to the marinade and let them soak for about 30 minutes.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let them marinate for about 15-30 minutes.
  3. Preheat your grill on medium-high heat or the oven to 400°F (200°C).
  4. For grilling, place the marinated salmon on the grill, skin side down, along with the peaches. Grill for 6-8 minutes per side, or until the fish flakes easily with a fork. For baking, lay the salmon and peaches on a lined baking sheet and roast for 12-15 minutes or until cooked through.
  5. If peaches are intact, grill or roast them until caramelized, approximately 2-3 minutes on each side.
  6. Plate the salmon and spoon over the remaining marinade, complemented with the caramelized peaches.

Notes

For a non-alcoholic option, consider using a blend of apple juice and vanilla extract. This dish pairs well with sautéed greens or a quinoa salad.
