Ingredients

- 2 lbs chuck roast or brisket, diced
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, diced
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2–3 sprigs fresh thyme
- 2 bay leaves
- 1 sprig fresh rosemary
- Salt and pepper to taste
Instructions
- Heat oil in a Dutch oven over medium-high heat. Sear beef until browned, then remove.
- Add onions to the pot; sauté until soft. Then add garlic and cook until fragrant.
- Return beef to the pot, adding broth, tomatoes, and herbs. Bring to a simmer.
- Cover and braise on low heat (or in a 300°F oven) for 2-3 hours until beef is tender.
- 30 minutes before serving, stir in carrots and potatoes until tender.
- Check seasoning and adjust if necessary before serving.
Notes
For a thicker sauce, mix cornstarch with water and stir in after cooking. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
