Description

A comforting dish featuring tender short ribs braised in sweet apple cider, served with creamy rosemary mashed sweet potatoes.


Ingredients

  • 2 lbs beef short ribs
  • 2 cups fresh apple cider
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 sprigs fresh rosemary
  • 2 lbs sweet potatoes, peeled and chopped
  • 2 tbsp butter
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Brown the ribs in a Dutch oven over medium heat with olive oil, seasoning with salt and pepper.
  2. Remove the ribs and sauté onions until translucent, then add minced garlic and cook until fragrant.
  3. Deglaze the pot with apple cider, scraping up any browned bits.
  4. Return the ribs to the pot, adding enough cider or beef broth to nearly submerge them and a few sprigs of rosemary.
  5. Braise in an oven preheated to 300°F (150°C) for about 3 hours until tender.
  6. Meanwhile, boil sweet potatoes in salted water until fork-tender, then drain and mash with butter, rosemary, and seasonings.
  7. Serve the ribs with a scoop of mashed sweet potatoes and drizzle with the reduced braising liquid.

Notes

For a vegetarian option, use hearty mushrooms braised in cider instead of short ribs.
