- 4 lbs Beef Short Ribs
- 1 cup Red Wine (Cabernet Sauvignon)
- 2 cups Beef Broth
- 2 Onions, chopped
- 4 cloves Garlic, minced
- 2 Carrots, chopped
- 2 stalks Celery, chopped
- 2 tbsp Tomato Paste
- 1 tbsp Olive Oil
- 1 tbsp Butter
- Fresh Thyme and Rosemary
- Salt and Pepper to taste
Instructions
- Heat a large pot over medium-high heat. Add olive oil and butter. Season ribs with salt and pepper, then brown on all sides.
- Remove ribs and set aside. Sauté onions, carrots, and celery until softened. Add garlic and cook until fragrant, then stir in tomato paste.
- Deglaze the pot with red wine, scraping up browned bits. Reduce slightly.
- Return ribs to the pot, add beef broth to submerge halfway, toss in herbs, and bring to a simmer.
- Cover and braise in a preheated oven at 300°F (150°C) for 3 to 4 hours until tender.
- Let the ribs rest for 15 minutes before serving. Strain braising liquid if desired.
Notes
Serve over creamy mashed potatoes or alongside sautéed greens. For extra richness, serve with a side of crusty bread.
