Description

A comforting and flavorful braised dish with tender beef short ribs simmered in red wine and aromatic vegetables, perfect for family gatherings.


Ingredients

  • 4 lbs Beef Short Ribs
  • 1 cup Red Wine (Cabernet Sauvignon)
  • 2 cups Beef Broth
  • 2 Onions, chopped
  • 4 cloves Garlic, minced
  • 2 Carrots, chopped
  • 2 stalks Celery, chopped
  • 2 tbsp Tomato Paste
  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • Fresh Thyme and Rosemary
  • Salt and Pepper to taste

Instructions

  1. Heat a large pot over medium-high heat. Add olive oil and butter. Season ribs with salt and pepper, then brown on all sides.
  2. Remove ribs and set aside. Sauté onions, carrots, and celery until softened. Add garlic and cook until fragrant, then stir in tomato paste.
  3. Deglaze the pot with red wine, scraping up browned bits. Reduce slightly.
  4. Return ribs to the pot, add beef broth to submerge halfway, toss in herbs, and bring to a simmer.
  5. Cover and braise in a preheated oven at 300°F (150°C) for 3 to 4 hours until tender.
  6. Let the ribs rest for 15 minutes before serving. Strain braising liquid if desired.

Notes

Serve over creamy mashed potatoes or alongside sautéed greens. For extra richness, serve with a side of crusty bread.
