- 2 cups fresh or frozen cherries (pitted and halved)
- 1/2 cup brandy (or cherry liqueur for a twist)
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 large egg yolks
- 1 cup dark chocolate chunks (high-quality)
Instructions
- Prepare the cherries by soaking them in brandy for at least 30 minutes.
- In a saucepan, heat milk, sugar, and salt until the sugar dissolves and the mixture is steaming.
- Whisk the egg yolks, then temper them by slowly adding the hot milk mixture.
- Cook the custard over low heat until thick enough to coat the back of a spoon (5-10 minutes).
- Strain the custard, stir in heavy cream, and refrigerate until chilled (at least 4 hours).
- Churn in an ice cream maker according to the manufacturer’s instructions.
- Fold in the soaked cherries and chocolate chunks, then freeze in an airtight container for about 4 hours.
- Scoop and serve, garnished with extra cherries and chocolate if desired.
