Instructions
- Preheat your oven to 350°F (175°C) and prepare a round cake pan by greasing and flouring it.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the lemon zest and juice.
- In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour.
- Mix just until combined, being careful not to overmix.
- Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. Drizzle with a glaze made of powdered sugar and lemon juice if desired.

Ensure all ingredients are at room temperature for best results. You can substitute unsalted butter with coconut oil and use yogurt instead of milk for moisture.
