Description
Delightfully crispy shortbread infused with the rich, nutty flavor of brown butter and studded with melty chocolate chunks.
Ingredients
Scale
- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 cups all-purpose flour
- 1 cup chocolate chunks
- 1 tsp vanilla extract
- Coarse sea salt for topping
Instructions
- In a saucepan over medium heat, melt the butter until it starts bubbling.
- Stir continuously until the butter turns a beautiful amber color and releases a nutty aroma. Remove from heat and let cool slightly.
- In a large bowl, whisk together the granulated sugar, brown sugar, and vanilla extract.
- Pour in the cooled brown butter and mix until well combined.
- Add the flour and stir until just blended, being careful not to overmix.
- Fold in the chocolate chunks.
- Prepare a baking sheet by lining it with parchment paper.
- Scoop the dough onto the sheet, shaping it into balls and gently flattening them.
- Bake in a preheated oven at 350°F (175°C) for about 12-15 minutes or until the edges are crisp.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
- For an extra touch, sprinkle coarse sea salt on top as they cool.
Notes
Letting the dough chill for at least 30 minutes enhances the flavors and texture.
