Crispy egg rolls filled with the flavors of buffalo chicken dip, perfect for gatherings or movie nights.

- 2 cups shredded chicken (boneless, skinless)
- 1/2 cup buffalo sauce
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 8 egg roll wrappers
- 2 green onions, sliced
- Ranch or blue cheese dressing for dipping
Instructions
- Preheat your oven to 400°F or heat oil in a large skillet over medium heat.
- In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and sliced green onions. Mix until well combined.
- On a clean surface, place an egg roll wrapper diagonally. Spoon about 2 tablespoons of the chicken mixture onto the center of the wrapper.
- Fold the bottom corner over the filling, tucking it in tightly. Then, fold in the sides and roll it up to seal the edges with water.
- If baking, brush each egg roll with oil and line them on a baking sheet. Bake for about 20-25 minutes, turning halfway through, until golden brown.
- If frying, place the egg rolls in hot oil and fry until golden and crisp, about 3-4 minutes per side.
- Remove from oil and drain on paper towels. Serve hot with ranch or blue cheese dressing.
Notes
For a vegetarian option, swap chicken for sautéed mushrooms or tofu. You can also use spring roll wrappers if egg roll wrappers are unavailable.
