Description

Crispy egg rolls filled with the flavors of buffalo chicken dip, perfect for gatherings or movie nights.


Ingredients

  • 2 cups shredded chicken (boneless, skinless)
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 8 egg roll wrappers
  • 2 green onions, sliced
  • Ranch or blue cheese dressing for dipping

Instructions

  1. Preheat your oven to 400°F or heat oil in a large skillet over medium heat.
  2. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and sliced green onions. Mix until well combined.
  3. On a clean surface, place an egg roll wrapper diagonally. Spoon about 2 tablespoons of the chicken mixture onto the center of the wrapper.
  4. Fold the bottom corner over the filling, tucking it in tightly. Then, fold in the sides and roll it up to seal the edges with water.
  5. If baking, brush each egg roll with oil and line them on a baking sheet. Bake for about 20-25 minutes, turning halfway through, until golden brown.
  6. If frying, place the egg rolls in hot oil and fry until golden and crisp, about 3-4 minutes per side.
  7. Remove from oil and drain on paper towels. Serve hot with ranch or blue cheese dressing.

Notes

For a vegetarian option, swap chicken for sautéed mushrooms or tofu. You can also use spring roll wrappers if egg roll wrappers are unavailable.
