  • 4 Bell Peppers (red or yellow)
  • 2 cups Shredded Chicken
  • 1/2 cup Buffalo Sauce
  • 4 oz Cream Cheese
  • 1 cup Cheddar Cheese, shredded
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • Fresh Cilantro or Parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds. Arrange them in a baking dish, cut-side up.
  3. In a skillet, sauté chopped onions in a little olive oil until translucent. Add minced garlic and shredded chicken, followed by buffalo sauce. Stir until combined and heated through. Add cream cheese and cheddar, letting it melt.
  4. Generously fill each pepper with the mixture, packing it down slightly and sprinkling extra cheese on top.
  5. Cover the dish with foil and bake for 25 minutes. Remove the foil for the last 10 minutes.
  6. Garnish with fresh herbs and serve warm.

Consider balancing spice with ranch dressing if desired. Blanching peppers can prevent them from becoming soggy.
