- 4 Bell Peppers (red or yellow)
- 2 cups Shredded Chicken
- 1/2 cup Buffalo Sauce
- 4 oz Cream Cheese
- 1 cup Cheddar Cheese, shredded
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- Fresh Cilantro or Parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds. Arrange them in a baking dish, cut-side up.
- In a skillet, sauté chopped onions in a little olive oil until translucent. Add minced garlic and shredded chicken, followed by buffalo sauce. Stir until combined and heated through. Add cream cheese and cheddar, letting it melt.
- Generously fill each pepper with the mixture, packing it down slightly and sprinkling extra cheese on top.
- Cover the dish with foil and bake for 25 minutes. Remove the foil for the last 10 minutes.
- Garnish with fresh herbs and serve warm.
Notes
Consider balancing spice with ranch dressing if desired. Blanching peppers can prevent them from becoming soggy.
