Description

A delightful dish featuring creamy burrata cheese stuffed in pasta shells, combined with sautéed mushrooms, garlic, and fresh herbs.


Ingredients

  • Large pasta shells (conchiglie)
  • Burrata cheese
  • Cremini or portobello mushrooms
  • Fresh garlic
  • Fresh basil and parsley
  • Extra virgin olive oil
  • Salt and pepper

Instructions

  1. Cook the pasta shells according to package instructions until al dente.
  2. In a large skillet, heat olive oil, add crushed garlic, and sauté until fragrant. Add chopped mushrooms and cook until browned.
  3. In a bowl, combine sautéed mushrooms with torn burrata and fresh herbs.
  4. Preheat oven to 375°F (190°C) and stuff each pasta shell with the burrata mixture.
  5. Arrange stuffed shells in a baking dish and optionally cover with sauce.
  6. Bake covered with foil for 20 minutes, then uncover and bake for an additional 10 minutes.
  7. Garnish with fresh herbs, olive oil, and parmesan before serving.

Notes

For lighter filling, consider swapping burrata with ricotta and adding spinach. Leftover chicken can also be used.
