Description
A delightful dish featuring creamy burrata cheese stuffed in pasta shells, combined with sautéed mushrooms, garlic, and fresh herbs.
Ingredients
- Large pasta shells (conchiglie)
- Burrata cheese
- Cremini or portobello mushrooms
- Fresh garlic
- Fresh basil and parsley
- Extra virgin olive oil
- Salt and pepper
Instructions
- Cook the pasta shells according to package instructions until al dente.
- In a large skillet, heat olive oil, add crushed garlic, and sauté until fragrant. Add chopped mushrooms and cook until browned.
- In a bowl, combine sautéed mushrooms with torn burrata and fresh herbs.
- Preheat oven to 375°F (190°C) and stuff each pasta shell with the burrata mixture.
- Arrange stuffed shells in a baking dish and optionally cover with sauce.
- Bake covered with foil for 20 minutes, then uncover and bake for an additional 10 minutes.
- Garnish with fresh herbs, olive oil, and parmesan before serving.
Notes
For lighter filling, consider swapping burrata with ricotta and adding spinach. Leftover chicken can also be used.
