Description

Creamy burrata nestled in large pasta shells, enveloped in a rich tomato sauce, garnished with fresh basil.

Ingredients

  • Large pasta shells
  • Fresh burrata cheese
  • Tomato sauce
  • Fresh garlic
  • Sweet onions
  • Extra virgin olive oil
  • Fresh basil
  • Sautéed button or cremini mushrooms
  • Grated Parmesan cheese

Instructions

  1. Boil salted water and cook the pasta shells until al dente; drain and set aside.
  2. In a skillet, heat olive oil, add chopped onions and minced garlic until translucent; add mushrooms and cook until golden.
  3. Pour in tomato sauce and simmer for 10 minutes.
  4. Toss cooked shells into the sauce and add fresh basil.
  5. Fill each shell with the sauce-coated pasta and a piece of burrata.
  6. Optional: Bake filled shells at 375°F for 10-15 minutes with grated Parmesan on top.
  7. Serve warm with an extra drizzle of olive oil and fresh basil garnish.

Notes

For a lighter option, consider substituting zucchini noodles for the pasta shells. Ensure to use fresh burrata for best results.
