Ingredients
- Large pasta shells
- Fresh burrata cheese
- Tomato sauce
- Fresh garlic
- Sweet onions
- Extra virgin olive oil
- Fresh basil
- Sautéed button or cremini mushrooms
- Grated Parmesan cheese
Instructions
- Boil salted water and cook the pasta shells until al dente; drain and set aside.
- In a skillet, heat olive oil, add chopped onions and minced garlic until translucent; add mushrooms and cook until golden.
- Pour in tomato sauce and simmer for 10 minutes.
- Toss cooked shells into the sauce and add fresh basil.
- Fill each shell with the sauce-coated pasta and a piece of burrata.
- Optional: Bake filled shells at 375°F for 10-15 minutes with grated Parmesan on top.
- Serve warm with an extra drizzle of olive oil and fresh basil garnish.
Notes
For a lighter option, consider substituting zucchini noodles for the pasta shells. Ensure to use fresh burrata for best results.
