- 1 cup bell peppers, chopped
- 1 cup zucchini, chopped
- 1 cup cherry tomatoes
- 1 cup mushrooms, sliced

- 1 tsp fresh basil, chopped
- 1 tsp fresh thyme, chopped

Instructions
- Preheat your oven to 400°F (200°C).
- Chop your assorted veggies into uniform pieces, toss them with minced garlic, olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for about 25-30 minutes until tender.
- On a large platter, arrange the roasted vegetables in a wreath shape, leaving space in the center.
- Gently place the burrata in the center and slice it slightly to let the creamy interior out.
- Drizzle with olive oil, balsamic glaze, and sprinkle with fresh herbs before serving.
