- 1 ball of burrata cheese
- 2 zucchinis, chopped
- 1 cup cherry tomatoes, halved
- 1 bell pepper, chopped
- 2 cloves of fresh garlic, minced
- 1/4 cup extra virgin olive oil
- Fresh basil, for garnish
- Fresh parsley, for garnish
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Chop your chosen vegetables into bite-sized pieces and spread them on a baking sheet.
- Drizzle with olive oil and sprinkle with salt, pepper, and minced garlic; toss to combine.
- Roast the vegetables for 20-25 minutes, until tender and golden.
- Prepare your serving platter with a circular wreath shape made from fresh herbs.
- Once done, allow vegetables to cool slightly and arrange them around the wreath.
- Gently place the burrata in the center, making a small cut to let the creamy insides ooze out.
- Drizzle with more olive oil, finish with fresh herbs and cracked pepper, then serve immediately.
Notes
For substitutions, mozzarella can be used instead of burrata; seasonal vegetables can also be varied based on availability.
