Ingredients

  • 4 large eggs, at room temperature
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup toasted pecans, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toast the pecans on a baking tray for 8-10 minutes until aromatic.
  3. Cream the butter until fluffy, then gradually add the sugar until pale and creamy.
  4. Add eggs one at a time, mixing well after each.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry mix, being careful not to overmix.
  7. Fold in the toasted pecans.
  8. Pour into greased cake pans and level the surface.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  11. Frost with your favorite frosting and top with additional toasted pecans if desired.
