- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs, at room temperature
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 cup toasted pecans, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- Toast the pecans on a baking tray for 8-10 minutes until aromatic.
- Cream the butter until fluffy, then gradually add the sugar until pale and creamy.
- Add eggs one at a time, mixing well after each.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry mix, being careful not to overmix.
- Fold in the toasted pecans.
- Pour into greased cake pans and level the surface.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Frost with your favorite frosting and top with additional toasted pecans if desired.
Notes
Make sure to toast the pecans to enhance their flavor. Use room temperature ingredients for a better texture.
