- 1 teaspoon baking soda
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups butterscotch chips
- ½ cup heavy cream
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time and mix well. Incorporate the vanilla extract.
- In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the butterscotch chips gently into the dough.
- Scoop out the dough and place on the prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes until golden brown, then let them cool for 5 minutes on the baking sheets before transferring to wire racks.
- Whip together the heavy cream and powdered sugar until soft peaks form to make the filling.
- Spread the cream filling on the flat side of one cookie and sandwich it with another. Repeat with the remaining cookies.

Notes
Chill the dough for at least an hour to maintain shape while baking. Store cookies in an airtight container for up to a week.
