Instructions

- Toast the chopped pecans in a dry skillet over medium heat for 5-7 minutes until fragrant.
- In a mixing bowl, beat the softened butter and powdered sugar until light and fluffy (about 2-3 minutes).
- Add the vanilla extract and mix until combined.
- Gradually add the all-purpose flour and toasted pecans, mixing until just combined.
- Roll the dough into small balls (about one inch in diameter) and place them on a lined baking sheet.
- Bake for 10-12 minutes, until the edges are golden and the centers are soft.
- Cool slightly before rolling in powdered sugar to create the ‘snowball’ appearance.
