Ingredients
Scale
- 1 cup Unsalted Butter, room temperature
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
- 2 cups All-Purpose Flour
- 1 cup Chopped Pecans, toasted
- 1/4 teaspoon Salt
- Optional: 1/2 teaspoon Almond Extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened unsalted butter and powdered sugar until light and fluffy, about 2-3 minutes.
- Stir in the vanilla extract and almond extract, if using.
- In a separate bowl, combine the all-purpose flour, toasted pecans, and salt. Gradually mix this into the wet ingredients until just combined.
- Scoop about a tablespoon of dough and roll it into a ball. Place them 1 inch apart on the baking sheets.
- Bake for about 10-12 minutes or until the bottoms are lightly golden.
- Let cool for a few minutes on the sheets, then roll in powdered sugar while still warm. Allow to cool completely and dust again with powdered sugar.
- Serve and enjoy!
Notes
Ensure your butter is at room temperature for easy mixing. Avoid overmixing the dough for a tender cookie.
