Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened unsalted butter and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Stir in the vanilla extract and almond extract, if using.
  4. In a separate bowl, combine the all-purpose flour, toasted pecans, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Scoop about a tablespoon of dough and roll it into a ball. Place them 1 inch apart on the baking sheets.
  6. Bake for about 10-12 minutes or until the bottoms are lightly golden.
  7. Let cool for a few minutes on the sheets, then roll in powdered sugar while still warm. Allow to cool completely and dust again with powdered sugar.
