- 1 lb lean Ground Beef
- 12 oz Spaghetti (or your choice of pasta)
- 8 oz Cream Cheese
- 1 cup Parmesan Cheese, freshly grated
- 1 cup Mozzarella Cheese
- 1 Bell Pepper, chopped (mixed colors)
- 8 oz Fresh Mushrooms, sliced
- 1 tablespoon Cajun Seasoning
- 1 cup Vegetable or Chicken Broth
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
Instructions
- Cook the Pasta: In a large pot of salted water, cook spaghetti until al dente. Reserve 1 cup of pasta water, drain, and set aside.
- Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Sauté onion until translucent, then add bell peppers and mushrooms; cook until softened, about 5-7 minutes.
- Brown the Beef: Push veggies aside, add ground beef, and brown it. Stir in Cajun seasoning.
- Create the Sauce: Add cream cheese, mixing until melted and creamy. Gradually pour in broth until desired consistency is reached.
- Mix in the Cheese: Reduce heat and mix in mozzarella and half of the Parmesan until melted.
- Combine & Adjust: Add drained pasta, gently mix with the sauce. Adjust sauce consistency with reserved pasta water as needed.
- Serve: Top with remaining Parmesan and fresh herbs before plating. Enjoy hot!
Notes
For a vegetarian option, replace ground beef with lentils or plant-based meat. Gluten-free pasta can also be used.
