Ingredients
- Boneless chicken (breast or thighs)
- Canned black beans
- Cajun seasoning
- Flour or corn tortillas
- Cheddar or Monterey Jack cheese

- Chopped bell peppers

Instructions
- Sauté the chicken with Cajun seasoning in olive oil until golden brown (5-7 minutes). Remove and shred the chicken.
- In the same skillet, cook chopped onions and bell peppers until tender (about 5 minutes).
- Add shredded chicken and black beans back to the skillet, mix in remaining Cajun seasoning, and heat until warmed through.
- Lay a tortilla flat, fill it with the chicken and bean mixture, sprinkle with cheese and cilantro, and roll tightly.
- Toast the wrapped burrito in a pan with oil until golden brown.
- Serve warm with desired toppings like sour cream or salsa.
