Ingredients

  • 1 lb boneless chicken (breast or thighs), diced
  • 1 can black beans, rinsed and drained
  • 2 tbsp Cajun seasoning
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 large tortillas (flour or corn)
  • 1 cup cheese (sharp cheddar or pepper jack)
  • Toppings: sour cream, guacamole, salsa, fresh cilantro

Instructions

  1. Heat a skillet over medium heat, add olive oil, and sauté onion and bell peppers for about 5 minutes until tender.
  2. Add minced garlic, stirring for 1 minute until fragrant.
  3. Add diced chicken, sprinkle with Cajun seasoning, and cook for 7-10 minutes until no longer pink. Stir in black beans and warm through.
  4. Warm tortillas in a separate pan or microwave until pliable.
  5. Assemble burritos by placing chicken and bean mixture in each tortilla, sprinkle with cheese and preferred toppings, roll tightly, and place seam-side down on a baking sheet.
  6. For crispy burritos, bake at 400°F (200°C) for about 10 minutes.

Notes

Feel free to substitute chicken with tofu or jackfruit for a vegetarian option. Customize burritos with desired toppings.
