Description

Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 tbsp Cajun seasoning
  • 2 cloves fresh garlic (minced)
  • 2 eggs
  • 1 cup buttermilk
  • Vegetable or peanut oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a bowl, combine buttermilk and minced garlic. Soak shrimp in this mixture for at least 30 minutes.
  3. In another bowl, whisk together flour, cornmeal, and Cajun seasoning.
  4. Remove shrimp from buttermilk, let excess drip off, then dredge in the flour mixture.
  5. Heat about two inches of oil in a skillet to 350°F (175°C).
  6. Fry the shrimp in batches for 3-4 minutes on each side until golden brown.
  7. Drain on paper towels and serve with lemon wedges and spicy remoulade.

Notes

Maintain oil temperature for crispy results. Avoid overcrowding the pan while frying.
