Ingredients

- 1 lb large shrimp (peeled and deveined)
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 2 tbsp Cajun seasoning
- 2 cloves fresh garlic (minced)
- 2 eggs
- 1 cup buttermilk
- Vegetable or peanut oil (for frying)
- Lemon wedges (for serving)
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a bowl, combine buttermilk and minced garlic. Soak shrimp in this mixture for at least 30 minutes.
- In another bowl, whisk together flour, cornmeal, and Cajun seasoning.
- Remove shrimp from buttermilk, let excess drip off, then dredge in the flour mixture.
- Heat about two inches of oil in a skillet to 350°F (175°C).
- Fry the shrimp in batches for 3-4 minutes on each side until golden brown.
- Drain on paper towels and serve with lemon wedges and spicy remoulade.
Notes
Maintain oil temperature for crispy results. Avoid overcrowding the pan while frying.
