- 4 cups diced potatoes (Russets or Yukon Gold)
- 2 tablespoons butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 stalk celery, diced
- 1 bell pepper, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- Cajun seasoning, to taste
- Salt and pepper, to taste
- Sliced green onions and parsley for garnish
Instructions
- In a large saucepan, melt the butter over medium heat and add diced onion, minced garlic, celery, and bell pepper. Sauté until softened for 5-7 minutes.
- Add the diced potatoes and stir to combine.
- Pour in the broth and bring to a boil. Lower the heat and let it simmer for about 20 minutes, until the potatoes are tender.
- If desired, use an immersion blender to puree a portion of the soup for a creamier texture.
- Stir in the heavy cream and adjust seasoning with salt, pepper, and Cajun seasoning.
- Serve in bowls, garnished with green onions and parsley. Optionally, add a squeeze of lemon.
Notes
Avoid overcooking the potatoes to keep them intact. Enjoy with crusty bread for dipping.
