Ingredients

  • 4 cups diced potatoes (Russets or Yukon Gold)
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 stalk celery, diced
  • 1 bell pepper, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • Cajun seasoning, to taste
  • Salt and pepper, to taste
  • Sliced green onions and parsley for garnish

Instructions

  1. In a large saucepan, melt the butter over medium heat and add diced onion, minced garlic, celery, and bell pepper. Sauté until softened for 5-7 minutes.
  2. Add the diced potatoes and stir to combine.
  3. Pour in the broth and bring to a boil. Lower the heat and let it simmer for about 20 minutes, until the potatoes are tender.
  4. If desired, use an immersion blender to puree a portion of the soup for a creamier texture.
  5. Stir in the heavy cream and adjust seasoning with salt, pepper, and Cajun seasoning.
  6. Serve in bowls, garnished with green onions and parsley. Optionally, add a squeeze of lemon.

Notes

Avoid overcooking the potatoes to keep them intact. Enjoy with crusty bread for dipping.
