Ingredients

  • 1 lb Andouille sausage (or smoked/turkey sausage)
  • 2 large Yukon Gold or Russet potatoes, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1/2 cup heavy cream (or evaporated/almond milk)
  • 1 tsp Cajun seasoning (or your blend of paprika, cayenne, thyme, oregano)
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onions until translucent, about 5 minutes. Add minced garlic and sauté for another 1-2 minutes.
  2. Add sausage slices and cook for about 5-7 minutes until browned.
  3. Stir in chopped potatoes, carrots, and celery, cooking for a few minutes to slightly soften the vegetables.
  4. Pour in the broth, covering the vegetables. Season with salt, pepper, and Cajun seasoning. Bring to a boil, then reduce to a low simmer.
  5. Simmer for 20-30 minutes until potatoes are tender. Stir occasionally.
  6. Once soft, stir in the heavy cream and adjust seasoning. Garnish with green onions and serve warm.
