- 1 pound sausage (Andouille or kielbasa)
- 4 medium potatoes (Yukon gold or russets)
- 4 cups chicken or vegetable broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 cup heavy cream or half-and-half
- Fresh parsley or green onions for garnish
Instructions
- In a large soup pot, heat olive oil over medium heat. Add chopped onions, garlic, and bell peppers, and sauté until soft.
- Stir in sliced sausage and cook until browned.
- Incorporate cayenne pepper, paprika, and thyme, stirring well.
- Add diced potatoes and broth, bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Stir in cream and let it thicken slightly.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with parsley or green onions.
Notes
For a lighter version, use turkey sausage. Add carrots or celery for extra crunch.
