  • 1 green bell pepper, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup heavy cream or half-and-half
  • Fresh parsley or green onions for garnish

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Add chopped onions, garlic, and bell peppers, and sauté until soft.
  2. Stir in sliced sausage and cook until browned.
  3. Incorporate cayenne pepper, paprika, and thyme, stirring well.
  4. Add diced potatoes and broth, bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  5. Stir in cream and let it thicken slightly.
  6. Taste and adjust seasoning as needed.
  7. Serve hot, garnished with parsley or green onions.

Notes

For a lighter version, use turkey sausage. Add carrots or celery for extra crunch.
