- 4 medium Russet or Yukon Gold potatoes, cubed
- 1 lb Andouille sausage or smoked sausage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- 1 teaspoon fresh thyme
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 cup carrots or bell peppers (optional)
- Salt and pepper, to taste
Instructions
- Heat a tablespoon of olive oil in a large pot over medium heat. Add diced onions, minced garlic, and chopped celery. Sauté for about 5 minutes until soft and fragrant.
- Add the sausage and cook until browned, stirring occasionally.
- Stir in the cubed potatoes and pour in the broth. Bring to a boil, then lower the heat and let it simmer for 20 to 25 minutes until the potatoes are tender.
- Stir in the spices and herbs, adjusting for taste.
- Add the cream, allowing it to heat through, and adjust seasonings as needed.
- Ladle into bowls and garnish with fresh parsley. Serve with crusty bread.
Notes
For a creamier texture, use an immersion blender to blend a portion of the soup. Adjust spice levels to your preference.
