Ingredients

  • 1 lb Andouille sausage or smoked sausage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon fresh thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup carrots or bell peppers (optional)
  • Salt and pepper, to taste

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat. Add diced onions, minced garlic, and chopped celery. Sauté for about 5 minutes until soft and fragrant.
  2. Add the sausage and cook until browned, stirring occasionally.
  3. Stir in the cubed potatoes and pour in the broth. Bring to a boil, then lower the heat and let it simmer for 20 to 25 minutes until the potatoes are tender.
  4. Stir in the spices and herbs, adjusting for taste.
  5. Add the cream, allowing it to heat through, and adjust seasonings as needed.
  6. Ladle into bowls and garnish with fresh parsley. Serve with crusty bread.

Notes

For a creamier texture, use an immersion blender to blend a portion of the soup. Adjust spice levels to your preference.
