Delightful holiday treats that combine creamy cheesecake with a crunchy graham cracker crust and a festive candy cane coating.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream, whipped to soft peaks
- 1 cup candy canes, crushed
- 1 1/2 cups graham crackers, crushed
- 1/4 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- Combine crushed graham crackers and melted butter in a bowl; press the mixture into the bottom of mini muffin tins.
- Bake the crust for 5–7 minutes until golden; allow it to cool.
- In a large mixing bowl, beat cream cheese until smooth; gradually add sugar and vanilla extract.
- Gently fold in whipped heavy cream until fluffy.
- Reserve a couple of tablespoons of crushed candy canes for garnish and fold the rest into the cheesecake filling.
- Spoon the cheesecake filling into the cooled crusts, smoothing the tops; sprinkle reserved candy canes on top.
- Chill in the refrigerator for at least two hours to set.
- Remove bites from molds; serve with a drizzle of melted chocolate or mint for garnish.
Notes
For a lighter version, consider using low-fat cream cheese or Greek yogurt. These bites can also be frozen for up to 2 months.
