Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour and baking powder.
  3. In a separate large bowl, beat together the softened butter and sugar until light and fluffy.
  4. Add the egg and peppermint extract, then mix until combined.
  5. Slowly incorporate the dry ingredients until just combined.
  6. Fold in the crushed candy canes carefully.
  7. Scoop the dough onto a baking sheet lined with parchment paper, spacing 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. Let cool for a few minutes on the sheet before transferring to a wire rack to cool completely.
  10. Optionally, decorate with melted chocolate or more crushed candy canes.
