- 1 cup crushed candy canes
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour and baking powder.
- In a separate large bowl, beat together the softened butter and sugar until light and fluffy.
- Add the egg and peppermint extract, then mix until combined.
- Slowly incorporate the dry ingredients until just combined.
- Fold in the crushed candy canes carefully.
- Scoop the dough onto a baking sheet lined with parchment paper, spacing 2 inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Let cool for a few minutes on the sheet before transferring to a wire rack to cool completely.
- Optionally, decorate with melted chocolate or more crushed candy canes.
