  • 1 cup Granulated Sugar
  • 3 Apples (Granny Smith or Honeycrisp, sliced)
  • 3 Eggs
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsalted Butter (melted)
  • 1/2 cup Brown Sugar
  • 1 cup Rolled Oats
  • 1 cup crushed Graham Crackers or Digestive Biscuits
  • 1 tsp Cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a springform pan.
  2. Combine crushed graham crackers, melted butter, and a tablespoon of sugar. Press into the bottom of the pan and bake for 10 minutes.
  3. Beat cream cheese until smooth, then gradually add granulated sugar. Mix in eggs and vanilla extract until well combined. Pour over the crust.
  4. Toss sliced apples in brown sugar and cinnamon. Arrange on top of the cheesecake mixture.
  5. In a separate bowl, mix rolled oats, flour, brown sugar, cinnamon, and melted butter. Spread over the apples.
  6. Bake for 50-60 minutes until set but slightly jiggly. Cool completely, then refrigerate for at least four hours.
  7. Drizzle with caramel sauce just before serving.
