- 16 oz Cream Cheese (full-fat)
- 1 cup Granulated Sugar
- 3 Apples (Granny Smith or Honeycrisp, sliced)
- 3 Eggs
- 1 tsp Vanilla Extract
- 1/2 cup Unsalted Butter (melted)
- 1/2 cup Brown Sugar
- 1 cup Rolled Oats
- 1 cup crushed Graham Crackers or Digestive Biscuits
- 1 tsp Cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a springform pan.
- Combine crushed graham crackers, melted butter, and a tablespoon of sugar. Press into the bottom of the pan and bake for 10 minutes.
- Beat cream cheese until smooth, then gradually add granulated sugar. Mix in eggs and vanilla extract until well combined. Pour over the crust.
- Toss sliced apples in brown sugar and cinnamon. Arrange on top of the cheesecake mixture.
- In a separate bowl, mix rolled oats, flour, brown sugar, cinnamon, and melted butter. Spread over the apples.
- Bake for 50-60 minutes until set but slightly jiggly. Cool completely, then refrigerate for at least four hours.
- Drizzle with caramel sauce just before serving.
