A rich and creamy Caramel Crème Brûlée topped with a satisfying crackling caramel layer, perfect for any occasion.
Ingredients

- 2 cups heavy cream
- 6 egg yolks
- 3/4 cup granulated sugar
- 1 vanilla bean or 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream until just simmering. Add vanilla and salt.
- In a bowl, whisk egg yolks and sugar until pale and thickened.
- Gradually whisk warm cream into egg mixture to temper the eggs.
- Strain the mixture through a fine-mesh sieve.
- Pour custard into ramekins and place in a baking dish.
- Fill the baking dish with hot water to reach halfway up the sides of the ramekins.
- Bake for 30-40 minutes until set around the edges.
- Cool to room temperature, then refrigerate for at least 2 hours.
- Before serving, sprinkle sugar on top and use a torch to caramelize until crispy.
- Allow to cool slightly before serving.
Notes
For a dairy-free option, you can use coconut cream instead of heavy cream.
