Description

A rich and creamy Caramel Crème Brûlée topped with a satisfying crackling caramel layer, perfect for any occasion.


Ingredients

  • 2 cups heavy cream
  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream until just simmering. Add vanilla and salt.
  3. In a bowl, whisk egg yolks and sugar until pale and thickened.
  4. Gradually whisk warm cream into egg mixture to temper the eggs.
  5. Strain the mixture through a fine-mesh sieve.
  6. Pour custard into ramekins and place in a baking dish.
  7. Fill the baking dish with hot water to reach halfway up the sides of the ramekins.
  8. Bake for 30-40 minutes until set around the edges.
  9. Cool to room temperature, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle sugar on top and use a torch to caramelize until crispy.
  11. Allow to cool slightly before serving.

Notes

For a dairy-free option, you can use coconut cream instead of heavy cream.
