  • 1 large egg
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons melted butter
  • 1 tablespoon butter (for cooking)

Instructions

  1. Slice the ripe bananas into rounds.
  2. In a mixing bowl, combine flour, brown sugar, baking powder, and salt.
  3. Whisk in the egg, milk, and melted butter until just combined.
  4. Heat a non-stick skillet over medium heat and add butter.
  5. Pour about 1/2 cup of batter into the skillet and cook until bubbles form, about 2-3 minutes.
  6. Place banana slices on pancakes and cook for another minute.
  7. Flip pancakes and cook until golden brown, about 2 more minutes.
  8. For extra sweetness, sprinkle brown sugar on bananas before flipping.
  9. Serve warm with maple syrup and toppings as desired.
