- 2 ripe bananas, sliced
- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1 pinch salt
- 1 large egg
- 1 cup milk (dairy or non-dairy)
- 2 tablespoons melted butter
- 1 tablespoon butter (for cooking)
Instructions
- Slice the ripe bananas into rounds.
- In a mixing bowl, combine flour, brown sugar, baking powder, and salt.
- Whisk in the egg, milk, and melted butter until just combined.
- Heat a non-stick skillet over medium heat and add butter.
- Pour about 1/2 cup of batter into the skillet and cook until bubbles form, about 2-3 minutes.
- Place banana slices on pancakes and cook for another minute.
- Flip pancakes and cook until golden brown, about 2 more minutes.
- For extra sweetness, sprinkle brown sugar on bananas before flipping.
- Serve warm with maple syrup and toppings as desired.
