Description

A comforting and flavorful twist on traditional mashed potatoes, enriched with sweet caramelized onions.

Ingredients

Scale
  • 2 lbs Russet or Yukon Gold potatoes
  • 2 large sweet onions (like Vidalia or yellow)
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream or whole milk
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley or thyme (optional)

Instructions

  1. Prepare the Onions: Slice the onions thinly. In a large skillet, melt 2 tablespoons of butter over medium heat. Add onions and a pinch of salt. Sauté for 25-30 minutes until they turn golden brown.
  2. Cook the Potatoes: Peel and cut potatoes into chunks. Place them in a large pot, cover with cold water, and add salt. Bring to a boil and cook for 15-20 minutes until tender.
  3. Mash It Up: Drain the potatoes and return to pot. Add caramelized onions, remaining butter, and cream or milk. Mash until smooth and creamy, adjusting salt and pepper to taste.
  4. Finish and Serve: Transfer mashed potatoes to a serving bowl. Drizzle with melted butter and garnish with fresh herbs.

Notes

Patience is key in caramelizing the onions for the best flavor. Use a potato ricer for a smoother texture if desired.
