- 2 large sweet onions (like Vidalia or yellow)
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream or whole milk

Instructions
- Prepare the Onions: Slice the onions thinly. In a large skillet, melt 2 tablespoons of butter over medium heat. Add onions and a pinch of salt. Sauté for 25-30 minutes until they turn golden brown.
- Cook the Potatoes: Peel and cut potatoes into chunks. Place them in a large pot, cover with cold water, and add salt. Bring to a boil and cook for 15-20 minutes until tender.
- Mash It Up: Drain the potatoes and return to pot. Add caramelized onions, remaining butter, and cream or milk. Mash until smooth and creamy, adjusting salt and pepper to taste.
- Finish and Serve: Transfer mashed potatoes to a serving bowl. Drizzle with melted butter and garnish with fresh herbs.

Patience is key in caramelizing the onions for the best flavor. Use a potato ricer for a smoother texture if desired.
