Ingredients
- Baguette
- Yellow or sweet onions
- Button, cremini, or shiitake mushrooms
- Garlic
- Extra virgin olive oil
- Fresh thyme or rosemary
- Salt

Instructions
- Slice the baguette into ½-inch thick pieces.
- In a skillet, heat olive oil over medium heat and add sliced onions. Cook until soft and golden (15-20 minutes), adding water if needed.
- Add sliced mushrooms and minced garlic to the onions; sauté for 5-7 minutes until mushrooms are tender.
- Preheat oven to 375°F (190°C) and arrange baguette slices on a baking sheet; drizzle with olive oil and toast for 5-7 minutes.
- Assemble crostini by topping each baguette slice with the caramelized onion and mushroom mixture, and optionally add cheese or herbs.
- Serve warm on a platter.
