A comforting and hearty soup made with sweet carrots, aromatic cumin, and fresh herbs.
Ingredients

- 4 cups carrots, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 4–5 cups vegetable broth
- 2 tablespoons olive oil
- Fresh thyme or parsley for garnish
- Optional: coconut milk, nuts, or balsamic glaze for serving
Instructions
- Peel and dice your carrots into uniform 1-inch chunks.
- In a large pot, heat olive oil over medium heat, then add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add minced garlic and ground cumin to the pot and sauté for an additional minute.
- Stir in the chopped carrots and mix well with the onions and garlic.
- Pour in vegetable broth to cover the veggies, and bring to a gentle simmer.
- Cover the pot and cook for 20-25 minutes until the carrots are tender.
- Use an immersion blender to purée the soup until smooth, or allow to cool slightly before blending in batches.
- Return to low heat, adjust seasoning with salt and pepper, and add optional cream or coconut milk before serving.
- Garnish with fresh herbs and serve warm.
Notes
For a creamier texture, consider adding a splash of cream or coconut milk at the end. Taste and adjust seasonings as needed.
