Ingredients

  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 45 cups vegetable broth
  • 2 tablespoons olive oil
  • Fresh thyme or parsley for garnish
  • Optional: coconut milk, nuts, or balsamic glaze for serving

Instructions

  1. Peel and dice your carrots into uniform 1-inch chunks.
  2. In a large pot, heat olive oil over medium heat, then add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Add minced garlic and ground cumin to the pot and sauté for an additional minute.
  4. Stir in the chopped carrots and mix well with the onions and garlic.
  5. Pour in vegetable broth to cover the veggies, and bring to a gentle simmer.
  6. Cover the pot and cook for 20-25 minutes until the carrots are tender.
  7. Use an immersion blender to purée the soup until smooth, or allow to cool slightly before blending in batches.
  8. Return to low heat, adjust seasoning with salt and pepper, and add optional cream or coconut milk before serving.
  9. Garnish with fresh herbs and serve warm.

For a creamier texture, consider adding a splash of cream or coconut milk at the end. Taste and adjust seasonings as needed.
