Description
A luxurious creamy pasta dish infused with champagne and topped with freshly grated Parmesan.
Ingredients

- Fettuccine or tagliatelle pasta
- 1 cup dry Champagne or sparkling wine
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 8 ounces cremini or shiitake mushrooms, sliced
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt and freshly cracked black pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve about a cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add the chopped shallots and minced garlic, and sauté until fragrant and translucent.
- Add the sliced mushrooms and sauté until softened and golden, about 5-7 minutes.
- Pour in the champagne and reduce for 2-3 minutes until slightly reduced.
- Reduce heat to low and stir in the heavy cream. Let it simmer gently for about 5 minutes, thickening slightly.
- Gradually whisk in the grated Parmesan until melted and smooth. If the sauce is too thick, add a splash of reserved pasta water to achieve the desired consistency.
- Add the drained pasta to the sauce, tossing gently to coat. Season with salt, black pepper, and fresh herbs.
- Serve warm, garnished with additional Parmesan and herbs if desired.
Notes
Using freshly grated cheese enhances the flavor. Feel free to adjust the herbs and seasonings to your preference.
