Description

A luxurious creamy pasta dish infused with champagne and topped with freshly grated Parmesan.


Ingredients

  • Fettuccine or tagliatelle pasta
  • 1 cup dry Champagne or sparkling wine
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 8 ounces cremini or shiitake mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Cook the pasta in a pot of salted boiling water according to package instructions until al dente. Reserve about a cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat. Add the chopped shallots and minced garlic, and sauté until fragrant and translucent.
  3. Add the sliced mushrooms and sauté until softened and golden, about 5-7 minutes.
  4. Pour in the champagne and reduce for 2-3 minutes until slightly reduced.
  5. Reduce heat to low and stir in the heavy cream. Let it simmer gently for about 5 minutes, thickening slightly.
  6. Gradually whisk in the grated Parmesan until melted and smooth. If the sauce is too thick, add a splash of reserved pasta water to achieve the desired consistency.
  7. Add the drained pasta to the sauce, tossing gently to coat. Season with salt, black pepper, and fresh herbs.
  8. Serve warm, garnished with additional Parmesan and herbs if desired.

Notes

Using freshly grated cheese enhances the flavor. Feel free to adjust the herbs and seasonings to your preference.
