Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup champagne
  • 1 cup granulated sugar
  • 2 tablespoons gelatin
  • 2 tablespoons fresh lemon juice
  • 1/2 cup water

Instructions

  1. Prepare the Strawberries: Wash and hull the strawberries, then slice into halves or quarters. Sprinkle with sugar and let them macerate for about 30 minutes.
  2. Hydrate the Gelatin: Sprinkle the gelatin over cold water and let it sit for about 5 minutes until it blooms.
  3. Combine Ingredients: In a saucepan over medium heat, combine the macerated strawberries, lemon juice, and champagne. Bring to a gentle simmer, stirring occasionally to dissolve the sugar.
  4. Add the Gelatin: Remove from heat and gently stir in the bloomed gelatin until fully dissolved.
  5. Chill and Set: Pour the mixture into molds or jars and refrigerate for at least 240 minutes or until set.
  6. Serve and Enjoy: Run a knife around the edges and invert onto a plate. Add whipped cream or fresh mint for garnish.

Notes

For non-alcoholic variation, use sparkling grape juice instead of champagne. Consider other berries for substitutions.
