- 2 cups fresh strawberries, hulled and sliced
- 1 cup champagne
- 1 cup granulated sugar
- 2 tablespoons gelatin
- 2 tablespoons fresh lemon juice
- 1/2 cup water
Instructions
- Prepare the Strawberries: Wash and hull the strawberries, then slice into halves or quarters. Sprinkle with sugar and let them macerate for about 30 minutes.
- Hydrate the Gelatin: Sprinkle the gelatin over cold water and let it sit for about 5 minutes until it blooms.
- Combine Ingredients: In a saucepan over medium heat, combine the macerated strawberries, lemon juice, and champagne. Bring to a gentle simmer, stirring occasionally to dissolve the sugar.
- Add the Gelatin: Remove from heat and gently stir in the bloomed gelatin until fully dissolved.
- Chill and Set: Pour the mixture into molds or jars and refrigerate for at least 240 minutes or until set.
- Serve and Enjoy: Run a knife around the edges and invert onto a plate. Add whipped cream or fresh mint for garnish.
Notes
For non-alcoholic variation, use sparkling grape juice instead of champagne. Consider other berries for substitutions.
