A delightful jelly combining the sweetness of strawberries with the effervescence of Champagne, perfect for any celebration.
Ingredients

- 2 cups fresh strawberries, sliced
- 1 cup dry or semi-dry Champagne
- 1 cup granulated sugar
- 1/4 cup pectin (liquid or powdered)
- 2 tablespoons lemon juice
Instructions
- Wash the strawberries thoroughly, remove the stems, and slice them into quarters.
- In a large saucepan, combine sliced strawberries with sugar and let sit for about 30 minutes.
- Add Champagne and lemon juice to the mixture, stir well, and heat over medium temperature.
- Bring the mixture to a gentle boil while stirring continuously, then reduce heat and simmer for about 10 minutes.
- Sprinkle in the pectin and stir continuously for another 2-3 minutes until it dissolves.
- To test if the jelly has set, place a spoonful on a cold plate and run your finger through it. If it holds its shape, it’s ready.
- Pour the hot jelly into sterilized jars, seal tightly, and allow to cool at room temperature.
- Store sealed jars in the refrigerator for up to three weeks.
Notes
This jelly can be served on biscuits, yogurt parfaits, or with cheese platters. It can also be enjoyed with a glass of sparkling wine.
