Ingredients
- Boneless, skinless chicken thighs
- Cheddar or mozzarella cheese
- Store-bought puff pastry
- Fresh mushrooms (cremini or button)
- Fresh garlic
- Yellow or white onion
- Fresh thyme or parsley
- Butter
Instructions
- In a skillet, heat butter over medium heat, add chopped onions and minced garlic; sauté until translucent, about 2-3 minutes.
- Add sliced mushrooms and cook until golden brown, then add diced chicken thighs, seasoning with salt, pepper, and herbs. Cook until chicken is no longer pink, about 7-8 minutes, then stir in cheese to melt.
- Preheat oven to 400°F (200°C). Roll out puff pastry until thin but sturdy.
- Cut pastry into squares or circles, place filling in the center, fold over and crimp edges to seal.
- Place on a baking sheet, brush with butter, and bake for 20-25 minutes until golden brown.
- Cool slightly before serving, garnishing with herbs if desired.
