Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup shredded cheese (mozzarella, cheddar, or a blend)
  • 1 sheet puff pastry
  • 2 tablespoons fresh herbs (thyme, rosemary, or parsley)
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt butter in a skillet over medium heat. Season chicken thighs with salt and pepper and sauté for 5 to 7 minutes on each side until golden brown and cooked through.
  3. Remove chicken, add minced garlic and herbs to the same pan, cooking until fragrant.
  4. Dice cooked chicken and return it to the skillet, mixing in the cheese until it starts to melt.
  5. Roll out the pastry, cut into desired shapes, spoon the chicken mixture onto half, fold over, and seal the edges with a fork.
  6. Bake for 20-25 minutes until golden brown and flaky.

Notes

For a lighter option, you can use phyllo dough or add vegetables to the chicken mixture.
