Instructions

  1. Prepare the Crust: Combine flour, butter, sugar, and salt in a bowl until resembling coarse crumbs. Add ice water until it holds together, then roll out and chill for 30 minutes.
  2. Make the Filling: Beat cream cheese until smooth, then mix in sugar, eggs one at a time, vanilla, cinnamon, and nutmeg.
  3. Prepare the Apples: Peel, core, and slice apples, tossing with sugar and spices.
  4. Assemble the Pies: Preheat oven to 350°F (175°C). Fill pie crust with cheesecake filling, layer apples, cover with another crust and seal edges.
