- 8 oz cream cheese
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 1 pie crust (store-bought or homemade)
Instructions
- Prepare the Crust: Combine flour, butter, sugar, and salt in a bowl until resembling coarse crumbs. Add ice water until it holds together, then roll out and chill for 30 minutes.
- Make the Filling: Beat cream cheese until smooth, then mix in sugar, eggs one at a time, vanilla, cinnamon, and nutmeg.
- Prepare the Apples: Peel, core, and slice apples, tossing with sugar and spices.
- Assemble the Pies: Preheat oven to 350°F (175°C). Fill pie crust with cheesecake filling, layer apples, cover with another crust and seal edges.
- Bake: Bake for 45-50 minutes until apples are tender and crust is golden brown. Cover with foil if browning too quickly.
- Cool and Serve: Let pies cool for 20 minutes before slicing. Serve warm, optionally with ice cream.
