Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth. Refrigerate to firm up.
  3. Cream together butter and sugar until light and fluffy. Beat in the eggs, buttermilk, and food coloring.
  4. Sift together flour, cocoa powder, baking soda, and salt. Gradually incorporate into the wet mixture.
  5. Chill the dough in the fridge for at least 30 minutes.
  6. Scoop tablespoons of dough, flatten, and place a spoonful of cream cheese filling in the center, encasing it with dough.
