Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth. Refrigerate to firm up.
- Cream together butter and sugar until light and fluffy. Beat in the eggs, buttermilk, and food coloring.
- Sift together flour, cocoa powder, baking soda, and salt. Gradually incorporate into the wet mixture.
- Chill the dough in the fridge for at least 30 minutes.
- Scoop tablespoons of dough, flatten, and place a spoonful of cream cheese filling in the center, encasing it with dough.
- Place on a lined baking sheet and bake for 10-12 minutes, until edges are set but centers are soft.
- Cool on a wire rack to meld flavors.
