- 1 cup fresh mushrooms, chopped
- 1 cup fresh spinach, chopped
- 1 cup bell peppers, chopped
- 1 cup carrots, grated
- 1 cup mozzarella cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 package puff pastry dough
- 2 cloves garlic, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons butter, melted (for brushing)
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté garlic in butter, add mushrooms, spinach, and bell peppers; cook for 5-7 minutes until tender.
- Allow the vegetable mixture to cool slightly, then mix in the cheeses and herbs.
- Roll out puff pastry into rectangles and cut accordingly.
- Place a spoonful of filling on each rectangle, fold, and seal edges with a fork.
- Brush tops with melted butter and place on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden brown and bubbling.
- Cool briefly before serving.
