  • 1 cup bell peppers, chopped
  • 1 cup carrots, grated
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 package puff pastry dough
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons butter, melted (for brushing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté garlic in butter, add mushrooms, spinach, and bell peppers; cook for 5-7 minutes until tender.
  3. Allow the vegetable mixture to cool slightly, then mix in the cheeses and herbs.
  4. Roll out puff pastry into rectangles and cut accordingly.
  5. Place a spoonful of filling on each rectangle, fold, and seal edges with a fork.
  6. Brush tops with melted butter and place on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes until golden brown and bubbling.
