Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook your choice of vegetables in butter or olive oil until tender.
- Whisk together the eggs, milk, and salt and pepper in a bowl.
- Spread the cooked vegetables evenly in the skillet and pour the egg mixture over them.
