Ingredients

- 1 cup fresh or thawed corn
- 1 cup shredded sharp cheddar cheese
- 2 slices of your favorite bread (sourdough or whole grain)
- Butter for spreading
- Salt and pepper to taste

Instructions
- In a bowl, mix corn, shredded cheese, salt, pepper, and herbs.
- Spread softened butter on two slices of bread.
- Spread the corn and cheese mixture over one slice and top with the other slice, buttered side up.
- Heat a skillet over medium heat and cook the sandwich for 4-5 minutes on each side until golden brown.
- Slice in half and serve with extra herbs or a side salad.
