Ingredients

- 3 cups fresh corn (or 2 cups frozen corn)
- 8 oz cream cheese, softened
- 1 cup shredded cheese (cheddar or a blend)
- 2 tablespoons butter
- 1 onion, diced
- 2 eggs
- 1 cup milk (or heavy cream)
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt butter in a skillet over medium heat and sauté onion until translucent, about 4-5 minutes.
- In a mixing bowl, beat eggs and add softened cream cheese, whisking until smooth.
- Stir in milk, salt, pepper, and garlic powder (if using).
- Fold in corn and sautéed onions, mixing well.
- Pour mixture into a greased 9×13 baking dish and top with shredded cheese.
- Bake for 45-50 minutes until cheese is bubbly and golden. Optionally, broil the last few minutes for a crispier top.
- Allow to cool for a few minutes before serving.
Notes
For a lighter version, use low-fat cream cheese and milk alternatives. Let the casserole rest for about 10 minutes before serving for cleaner slices.
