Ingredients

  • 3 cups fresh corn (or 2 cups frozen corn)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar or a blend)
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 eggs
  • 1 cup milk (or heavy cream)
  • Salt, to taste
  • Pepper, to taste
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in a skillet over medium heat and sauté onion until translucent, about 4-5 minutes.
  3. In a mixing bowl, beat eggs and add softened cream cheese, whisking until smooth.
  4. Stir in milk, salt, pepper, and garlic powder (if using).
  5. Fold in corn and sautéed onions, mixing well.
  6. Pour mixture into a greased 9×13 baking dish and top with shredded cheese.
  7. Bake for 45-50 minutes until cheese is bubbly and golden. Optionally, broil the last few minutes for a crispier top.
  8. Allow to cool for a few minutes before serving.

Notes

For a lighter version, use low-fat cream cheese and milk alternatives. Let the casserole rest for about 10 minutes before serving for cleaner slices.
